Sweet, sweet, lilacs

We are enjoying the lilac days in the garden,

dripping and heavy with rain,

using their intoxicating scent as a way to be invited  inside.

The scent of lilac is so sweet and delicious, I want to consume it every way possible. So luckily the flowers are edible. The flowers themselves don’t really taste like much, so it is really the scent that you are after. I like to capture it in honey or sugar, or even just sprinkled in my water. If you do decide to eat them, be sure they are from a safe, trustworthy source. You don’t want to eat them if they have been sprayed with chemicals.

Recipe for Lilac sugar

Lilac Sugar Ingredients:

  • Equal amounts (by volume) granulated sugar and rinsed lilac flowers with the stems removed

Instructions:

  1. Combine the fresh flowers and sugar in layers in a glass jar (I do 3 or 4 layers in a 1 pint jar)

  2. Give the jar a gentle shake every day until the flowers are dried (a week or so)

  3. You can leave the flowers in the sugar, or take them out and use them on baked goods!

  4. Enjoy the sugar for baking, tea, or cocktails and mocktails, or?

You could also make a simple Syrup, add the blossoms to honey, or put them in a pitcher of water—get creative!
